Meat Specialist

We, Triumvirate Consultancy, are hiring on behalf of our client in the Livestock and Meat Industry, based in Nairobi.

As the Meat Specialist, you will be responsible for ensuring the highest standards of meat cutting, aging, and processing. This role focuses on optimizing yield, driving product innovation, and ensuring premium quality across all high-value and specialty meat products. You will be working closely with the management and staff across various departments.

The successful candidate will:
• Define and standardize primal and sub-primal meat cuts (e.g., beef, lamb) to achieve maximum yield and consistency.
• Train and supervise butchery and processing teams on advanced cutting and handling techniques.
• Oversee meat aging processes (wet and dry) to ensure optimal tenderness, flavour, and quality.
• Develop and standardize recipes and procedures for processed meats such as sausages, bacon, and corned beef.
• Lead research and development of high-value meat products tailored for premium markets.
• Ensure compliance with meat quality, grading, and food safety standards (HACCP, ISO, etc.).
• Conduct regular inspections of raw materials and finished products to maintain quality assurance.
• Provide technical expertise and continuous training to enhance team competence and product consistency.

Qualifications:
• Diploma or degree in Meat Science, Food Technology, Animal Production, or a related field.
• Minimum of 5 years of hands-on experience in meat processing, butchery, or product development.
• In-depth expertise in meat cuts, carcass handling, meat aging, curing, and processing techniques.
• Thorough understanding of meat science, HACCP, and cold chain requirements.
• Proven leadership skills in supervising processing or butchery teams.
• Proactive, self-driven, and capable of working independently with minimal supervision.
